Japanese seasonings are essentials for making unique tastes which Japanese foods have, as well as other countries unique seasonings.

But some seasonings might be difficult to get in your food market.

It’s a sad thing the difficulty make you escape cooking Tasty Japanese foods.

For the reason, This site was made.

There are some ways to substitute for some Japanese seasonings.

If you can’t get some of seasonings, Please use this page!!

 

 Sake (Rice wine)

Dry White wine is substitute for Sake.

Cheap, less sweet and less smell one is better to choose as a substitute.

 

 

 Mirin (a type of sake with low alcohol and high sugar content)

Mixed one, Sake and sugar in the ratio 3:1(1tbsp: 1tsp) , is substitute for Mirin.

Dashi (Japanese based clear soup )

Mixed water with hondashi soup stock (the ratio is 200ml: 1tsp) is substitute for Dashi.

 Siro-Dashi 

(it’s different from Dashi)

Mixed one , Dashi, soy sauce, Mirin, and Salt in the ratio 1tbsp: 1tsp: 1tsp: little amount, is substitute for Siro-Dashi.

 Men-Tsuyu

Originally, Men-Tsuyu is a seasonings mixed with Dashi, Mirin, Soy sauce, and Sugar.

 

If you have Hondashi soup stock,

Mixed one, Water, Soy sauce, Mirin, and Hondashi soup stock in the ratio 200ml: 7tbsp:6tbsp: 1tsp, is substitute for Men-Tsuyu.

Before using it, put in a hot pot and evaporate alcohol.

When you use Dashi,

Mixed one, Dashi, Soy sauce, Mirin, and Sugar in the ratio 150ml: 2tbsp: 1/2tbsp: 1/2tsp, is substitute for Men-Tsuyu.

Before using it, put in a hot pot and evaporate alcohol.

 Otafuku Sauce

Mixed one, Ketchup, Wine vinegar, Soy sauce, and Hondashi soup stock in the ratio 3: 1: 1: little amount, is substitute for Otafuku Sauce.

 Japanese Worcester sauce

Mixed one, Ketchup, Soy sauce, and pepper in the ratio 7: 2: 1 is substitute for Japanese Worcester sauce.

Or

BBQ sauce is substitute for Japanese  Worcester sauce.

 

 Kata-kuri-ko (potato starch)

Basically, Four or Corn starch is substitute for Kata-kuri-ko (potato starch).

But its thickness is less than  Kata-kuri-ko (potato starch).

So use it bit more than  Kata-kuri-ko (potato starch).

 

When making thick starchy sauce,

The one which mix ground potatoes with 2 times amount of water ,and through a strainer is substitute for Kata-kuri-ko (potato starch).

Before use it, remove the liquid on the top.

1 (for example 5g) 2 (for example 10g)
