How to cook Tamago-Yaki(Japanese Baked eggs)

Tamago-Yaki is one of Japanese home Morning foods. Also Japanese eat it in Japanese Lunch box.

The taste is different from each families, sometimes sweet, sometimes salty. There are a lot of arrangements of this recipe.

This recipe is easy to cook!

At this recipe, you can cook plain one.

There is no problem, it’s one of really simple recipes but also let you enjoy eating time.

ingredients

SERVING: 2
Time: 10~15min

Eggs (M)  2

Water 1tsp

ーSeasoningsー

Soy sauce  1tsp

Suger 2tsp (if making sweeter, add more)

Salt 3g 

 

Cooking oil  Moderate amount

 

it’s easier to make it by a small pan than large one.

Instructions 

sop up oil

Place oil in a small bowl and sop up the oil with a kitchen paper.

Place the eggs in another bowl, beat them by chopsticks (or a fork).

Add in sugar, salt, soy sauce and water, and stir them to mix well.

2 (when using a frying pan)

By the kitchen paper, add a little oil in a frying pan, and heat the pan on the medium fire.

Pour a half of mixed ingredients out in the frying pan.

Stir lightly with chopstick(or fork) touching the bottom of the pan until the egg is half-boiled.

When a egg is half-boiled, fold both sides.

Roll it from the back to the front.

Push the eggs to the back-side, and add in a little oil again.

Add a half of the rest of the ingredients, bring up the baked egg slightly and pour the ingredients under the eggs.

Fold both-sides and roll it when eggs that pour out is half-boiled.

Add the rest of ingredients, and do the same thing.

Transfer it to a plate after the eggs are brown lightly.

Just before eating, cut it into the bite size.

 


2 (when using dedicated pan for making Tamago-Yaki)

Dedicated pan

By the kitchen paper, Place a little oil in the pan, and heat the pan on High.

After heated enough, reduce the fire.

Add in a half of mixed ingredients on the pan.

After adding in the ingredients, due to baking corners or sides faster than other sides, gather the eggs from corner to centre by chopsticks touching the bottom of the pan.

(it’s to bake equally)

Then, Roll it from the back to the front.

(At first rolling, it’s ok to roll roughly. )

Push the eggs to the back-side, and add in a little oil again.

Add in a half of the rest of the ingredients in the space of the pan.

Bring up baked egg slightly and pour the ingredients under the eggs.

Roll it when eggs are half-boiled.

Add the rest of ingredients, and do the same thing(step 5&6).

Place it a plate after eggs get brown lightly.

Just before eating, cut it into the bite size.

 heat the pan well.
